Cheesy Chicken Casserole
Here's my entry for the Carnival of Recipes!
Got this recipe from the Publix flyer they sent out. I would like it if it was a little spicier, but the rest of the family loved it.
Ingredients:
1 (14 oz) can chicken broth
2 (10 3/4 oz) cans condensed cream of mushroom soup
1 (10 3/4 oz) can condensed Cheddar cheese soup
1 (4 oz) can mushroom pieces
20 round buttery crackers
1 large zip-top bag
1 cooking spray
1 (20 oz) bag frozen diced chicken breast (or 3 cups leftover rotisserie chicken)
1 (8 oz) bag extra wide egg noodles
Directions:
- Preheat oven to 400F
- Place large saucepan on high heat. Add broth, soups and mushrooms. Whisk thoroughly, cover and bring to boil, stirring occassionally.
- Place crackers in zip-top bag, seal tightly and crush.
- Spray 9x13-inch baking dish with cooking spray. Place chicken on bottom of dish.
- Stir noodles into boiling mixture and return to boil. Boil 3 minutes, stirring occasionally.
- Pour noodle mixture over chicken and sprinkle with crackers.
- Spray top with cooking spray and bake 15 minutes.
- Serve
